What is a Simmer Pot?
A simmer pot is filled with water, aromatic fruits, herbs, and spices, infusing the air with its delightful aroma as it simmers on the stove or crockpot.
Simmer Pot Ingredients (Fall & Winter)
In creating fall and winter simmer pots, I recommend selecting fruits, herbs, and spices that evoke the essence of the season. There are no strict rules to follow; even if you lack specific ingredients, it’s simple to craft a simmer pot using a variety of seasonal items. For instance, if you’re without a cinnamon stick, substitute with a teaspoon of ground cinnamon. Alternatively, if cinnamon is unavailable, try using allspice or pumpkin spice for a the aromatic blend. Get creative and try different blends!
But if you want some simmer pot ingredients that are great to have on-hand, here’s a good starting list:
Fruits – fresh, frozen, or dried.
- Apples
- Oranges
- Cranberries
- Pears
- Pomegranate
Herbs – fresh, dried, or ground
- Rosemary
- Thyme
- Sage
- Pine needles
- Mint
Spices – fresh, dried, or ground
- Cinnamon
- Star Anise

- Pumpkin Spice

How to Make a Simmer Pot
Prepare on the Stove
Step 1. Prepare any ingredients you will be using by slicing and prepping any fresh fruits and herbs. If using dried fruits, spices, and herbs, just add them to the pot!
Step 2. Use a large pot to hold the ingredients and at least 4-6 cups of water. Bring the pot to a boil, then reduce to a simmer.
Step 3. Add more water to the pot as needed. Note: The aroma is best for the first few hours and will diminish the longer the pot simmers. As the fresh fruits break down, remove them from the pot and replenish with new, freshly cut fruits and spices.
Never leave a simmer pot unattended!
Always remember never to leave a simmer pot or crockpot overnight or unattended. Be sure to check regularly and add water as needed to prevent the fruits and spices from burning as the water evaporates.
Prepare in a Crock Pot
Step 1. Place the simmer pot ingredients in a small crock pot with 4-6 cups of water. Set on high. Note: If using a large crock pot, double or triple the ingredients and water.
Step 2. When the water is boiling, set it to low.
Step 3. Periodically check the water level and add more as needed.
How Long Do Simmer Pots Last?
While some people may choose to reuse simmer pots for several days, I believe that doing so results in a noticeable decrease in the aroma it imparts. Fresh fruits tend to break down, so I find that it’s good for one full day of simmering. To make the smell of fresh fruits and spices last longer, I periodically change them out during the day or add new spices into the pot.
If you opt to reuse your ingredients, it’s recommended to cover and refrigerate the mixture after it cools. Before simmering again, refresh the pot by adding new fruits, spices, and herbs.
