January Pinterest Challenge – One Skillet Chicken with Lemon Garlic Cream Sauce

For my January Pinterest Challenge, I chose to make this One Skillet Chicken with Lemon Garlic Cream Sauce recipe from this PIN. This popular pin from Little Spice Jar has been pinned over 500K times on Pinterest!

I stuck to the original recipe and only made a few changes to feed my family of 6. For example, the original recipe uses 4 chicken breasts, but I used an entire bag of chicken tenders. Because I used more chicken, I had to use two pans on the stove and then transferred all of the chicken to one baking dish for the oven. Another change was to double all the sauce measurements (one measurement of sauce in each pan), except for the pepper flakes. Thank goodness I didn’t double the pepper flakes because it would have been too spicy for my kids.

So what’s the verdict? The chicken turned out moist and tasted wonderful! The only other changes I would make is to triple the sauce (this is what makes the dish) and to skip the baking part. Since I substituted chicken tenders for the chicken breasts, I think the tenders could easily be finished on the stove top. Other than these minor changes, this is a KEEPER!
