Welcome to part 1 of a 4 part dinner salad round-up series. Why I am doing this series? Well, my husband and I have very different opinions of what to eat for dinner. He LOVES eating meat every night, while I prefer at least one meatless meal a week. Unfortunately, my meatless meals haven’t won over my boys, so I’ve come up a compromise – dinner salads! Dinner salads give me the lighter meal that I desire while the boys get the protein they crave.

Latin Inspired Chicken Dinner Salads
Do you love eating food from Latin America? My kids have mixed feeling on Latin American cuisine: my two girls don’t care for it and my boys love it. The split vote between my kids can sometimes make it difficult to prepare a meal that they all love. Even though my girls don’t care for many Latin dishes, they will eat taco salads…weird, right? That’s why these salads are the perfect meal to please everyone at the dinner table.

I can eat Asian food all day long. I don’t know what it is about Asian food, but I absolutely love it and I’m fortunate that my kids love it too. If you ask my kids for their favorite type of food, some type of Asian food will most likely be in the top three. So of course, Asian inspired chicken dinner salads are no-brainers at our house.

I love a dinner salad! I feel the same way, in a house full of boys they want meat and I want something lighter! I’m looking forward to this series, part 1 is already full of so may awesome ideas!
Thanks Krista. For some reason veggie meals just don’t seem to satisfy my boys. With dinner salads they can add as much meat as they want and I can add less.
This is a fabulous collection just in time for ‘salad season’! We tend to incorporate chicken tenderloins into a lot of meals in the summer, now I have some new options!
It’s so hot in SoCal already and I don’t even want to turn the stove on…lol. I’m a grilling fiend at the moment, so salads are the way to go for us.
