Want a tasty and cooling summer dessert? Try this easy Caramel Macchiato Coffee Jell-O dessert, using International Delight® Caramel Macchiato Iced Coffee. It’s the perfect treat for the hot summer weather!
Summer is less than a month away, which means the 90+ degree Southern California weather is almost upon us – ugh! I technically should be immune to the hot weather since I grew up in Hawaii, but I’m not a fan. In fact, the only thing that made the muggy Hawaii weather bearable were visits to the shaved ice truck, Guri Guri ice cream, and coffee Jell-O!
Yup, you read that right – Coffee. Jell-O.
I’m not sure who invented coffee Jell-O, but I remember first seeing it served at sushi restaurants in Hawaii. It was a simple gelatin dessert of sweetened coffee that was served with a dollop of whipped cream or condensed milk. It’s an odd dessert, but it quickly became one of my favorite desserts because it kept me cool and satisfied my ‘end of the meal’ coffee fix without the hot coffee. That’s a winning summer treat in my book because nobody wants to feel hot and sweaty after a nice meal, right?
So, when I picked up a few cartons of International Delight® Iced Coffee in the dairy section of Walmart, I decided to recreate the coffee Jell-O I used to eat in Hawaii. And because I especially love the convenient ready-to-drink coffeehouse taste of the International Delight® Caramel Macchiato Iced Coffee, I chose to create a Caramel Macchiato Coffee Jell-O dessert.
Of course, I didn’t use all of my International Delight® Iced Coffee stash in my recipe. I also made sure I drank my fair share of International Delight® Mocha Iced Coffee – the perfect mix of chocolate and coffee. I just had to twist off the carton cap, pour over ice, and sip my cold drink to help me beat the summer heat. But want to know the best part? I can pick up three cartons of International Delight® Iced Coffee (8 servings per carton) for about the same price of two coffee drinks from my local coffeehouse! That’s a total of 24 ice cold coffee servings right in my own fridge and I only had to leave my house once! So what are you waiting for? Skip the coffee shop, save money, and head over to Walmart to stock your fridge with International Delight® Iced Coffee!
Caramel Macchiato Coffee Jell-O
Coffee Jell-O is one of the easiest desserts to make and only takes a few minutes to prep, but it does require a few hours to set. Therefore, if you’re planning to serve this at a summer party, it’s best to prepare this a day ahead. You’ll find the hardest part of this recipe is choosing which flavor of International Delight® Iced Coffee to use.
The first thing I do is to add two (2) packets of unflavored gelatin into a small bowl with 1 cup of cold International Delight® Caramel Macchiato Iced Coffee. Mix these two ingredients together and let the gelatin ‘bloom’ for 1-2 minutes until the mixture thickens.
Tip: If the gelatin starts to harden or a film sets, this means it sat out too long. But don’t worry because this will dissolve when added to the warm coffee mixture in the next step.
While the gelatin is doing its thing, add 2 cups of International Delight® Caramel Macchiato Iced Coffee and sugar into a small pot over medium heat. When the sugar is dissolved and the coffee is warm (do not boil), turn off the heat. Add in the gelatin mixture and stir until the gelatin granules are dissolved.
Pour the mixture into one large serving container or spoon into 6, 6-ounce serving cups. Be careful not to create too many air bubbles on the surface because those will show in the finished product. Place the container or cups into the fridge for several hours to set. Then when it’s time to serve, top it with whipped cream!
Optional – If you want to get fancy, you can use regular leftover coffee to make coffee Jell-O squares. Just substitute regular coffee in the recipe and set the mixture in a flat square container. Then, cut the Jell-O into squares to top the Caramel Macchiato Coffee Jell-O or add them into any International Delight® Iced Coffee drink for an added twist.

How to make coffee Jell-O with International Delight Premade Coffees.
Ingredients
- 2 packets unflavored gelatin
- 1 cup cold + 2 cups International Delight® Caramel Macchiato Iced Coffee
- 1/2 cup sugar
Optional - Plain Coffee Jell-O
- 3/4 cup sugar
Instructions
- Add two (2) packets of unflavored gelatin into a small bowl with 1 cup of cold International Delight® Caramel Macchiato Iced Coffee. - Pour the mixture into one large serving container or spoon into 6, 6-ounce serving cups. Serve topped with whipped cream.
- Optional - follow the steps 1-3, replacing the International Delight Coffee with a plain strong brewed coffee. Increase the sugar to 3/4 cup. Pour into a 13" x 9" pan and chill in the fridge. When the Jell-O is set, cut into squares to top the Caramel Macchiato Coffee Jell-O or substitute them for boba in a coffee drink.

This sounds delicious but it is just not warm enough here yet to drink that much cold stuff. 🙁 Yesterday we had the highest temperature thus far and it was only in the low 50’s. Until it warms up here I will defintely send this off to my family in Mississippi!
