Lime Herb Chicken Marinade

Before I share this recipe, I have to admit that this recipe was a total accident and started with a bag of defrosted chicken in the fridge. I wanted to make Greek chicken but had no lemons and did not want to make a market run.

Hmm…what to do?

A quick scan of my fridge revealed leftover limes from the fish tacos we had the night before, so those would have to do. I added the limes to an olive oil mixture, marinaded the chicken overnight, and threw it on the grill for a deliciously tasty chicken!

Change up your chicken flavor with this fresh and bright lime herb chicken marinade.

Ingredients

  • 1 - 3lb. bag boneless skinless chicken thighs (trim off fat)
  • 1/4 cup olive oil
  • 2 Large lime juiced (about 3 Tablespoons)
  • 3 Large garlic cloves, minced
  • 1 tablespoon fresh thyme
  • 1 tablespoon dry oregano
  • 1/2 heaped teaspoon coarse sea salt
  • Optional - 1/2 teaspoon ground rosemary (substitute with heaping teaspoon of fresh chopped rosemary)

Instructions

Place defrosted and trimmed boneless chicken into a large resealable bag. In a small bowl, mix together all the marinade ingredients. Add this mixture to the chicken. Press out the air from the bag and seal. Let this marinate a minimum of 4 hours or up to 24 hours. Grill for about 10 - 12 minutes or when the internal temperature reaches 165°F.

Notes

Make sure the chicken thighs are fully defrosted before adding marinating. If short on marinade time, use a fork and poke holes in the thighs before marinating.
