Quick meals are a must during soccer season. It seems like I’m always scrambling to get dinner on the table in a timely manner. And let me tell you, there’s nothing scarier than having four teens with growling stomachs in the house. So one of my “go to” quick meals is a Chicken & Rice Burrito Recipe that uses fresh ingredients and Uncle Ben’s® Long Grain & Wild Rice.

Kroger Stores & Uncle Ben's Rice

Having quick prep items like Uncle Ben’s® Long Grain & Wild Rice in my pantry helps save time when I need to prepare a quick meal. So when I shop at my local Kroger family store, I make sure to stock up on various Uncle Ben’s® flavored rice and other ingredients for fast meals.
Boiled chicken

To keep ahead of our busy schedule, I also like to pre-boil a bag of frozen chicken in seasoned water. Having pre-cooked chicken in the refrigerator makes it easier for me to make a variety of meals during the busy week. Plus, I can freeze the broth for other recipes too. However, if I run out of pre-boiled chicken, I can always substitute it with rotisserie chicken.

Uncle Ben's Long Grain Wild Rice

Then, whenever I decide to make my Chicken & Rice Burrito Recipe, I just add a box of fast cooking Uncle Ben’s® Long Grain & Wild Rice with a few of my own ingredients. The great advantage of using Uncle Ben’s® when I’m pressed for time is that it’s ready in about 10 minutes and already flavored with 23 herbs and seasonings.

While the rice is cooking, I prep some of the other burrito ingredients – rinse and drain a can of black beans, chop the pre-cooked chicken, bell peppers, and green onions.

Cook the herbs & chicken

Next, warm the herbs in a pan until fragrant, add chopped chicken and bell peppers with a little bit of water. Cook until the bell peppers are slightly soft and add the black beans to warm through. Add this warm mix to a bowl and add the cheese. Stir the chicken mix and set this on the side.

Assemble the Chicken & Rice Burrito Recipe

To assemble the burritos, place Uncle Ben’s® Long Grain & Wild Rice, chicken mix, and tomatoes on a warmed tortilla. Roll and tuck in one side of the tortilla to make a tasty Chicken & Rice Burrito.

Chicken & Rice Burrito Recipe
Serves 4-5

Cook time 15 minutes

Ingredients

  • 1 box Uncle Ben's® Long Grain & Wild Rice Fast Cook (Cook following the box instructions)
  • 4-5 burrito size tortillas
  • 2 1/2 cups chopped cooked chicken
  • 1 cup Colby/Jack shredded cheese (can substitute with your favorite cheese)
  • 1/4 cup chopped green onions
  • 1/2 cup sliced bell peppers (cut into thin 1" slices)
  • 1 can black beans (drained and rinsed)
  • 1 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1 teaspoon oregano
  • 1/4 teaspoon garlic powder
  • 2 teaspoons water
  • salt to taste

Optional

  • 1/2 cup chopped tomato

Note

Two slices of cooked bacon can be added to each burrito for a twist.

Serve with sour cream, guacamole, cilantro, or any of your favorite burrito additions.

Directions

Step 1
Cook rice per the directions on the box. Set aside.
Step 2
Place cumin, chili powder, oregano, and garlic powder into a pan on medium heat. Warm for a few seconds until you can smell the seasoning. Add the chopped chicken, bell pepper, two teaspoons of water, and salt. Cook until bell pepper are slightly soft. Add in the black beans and warm through. Place the chicken mixture into a large bowl and add cheese. Stir until well combined. Set aside.
Step 3
Place a damp paper towel over 4-5 tortillas and warm in the microwave for 2 minutes.
Step 4
Place the rice, chicken mix, and tomatoes (optional) on the warm tortillas. Bring one side of the tortilla over the mix and roll. Fold up one end and continue to roll into a burrito. Serve with your favorite burrito condiments.

    This is perfect! We are always on the soccer field & it is so hard to get to a quick healthy meal on the table sometimes. I can’t wait to try this it looks delicious. My pantry is always stocked with seasoned rice, but I never thought of boiling my chicken & using it for other chickens. YUM!     I always forget about adding rice to my wraps! I normally just cook rice in broth and get all the flavour. I recently started adding thyme and butter and cook it in the oven! Sooooo good too 🙂

      I cook quinoa in my homemade broth and love it. I usually make regular rice for everyday dinners, but have never used thyme and butter in it…sounds interesting.
