Fruit Roll-Ups Ice Cream is an easy way to enjoy two classic treats at once. The fruity flavor of Fruit Roll-Ups candy combines with creamy vanilla ice cream for a dessert that’s out of this world!

For those that don’t have the Tik Tok app, like me, Fruit Roll-Ups Ice Cream is something I discovered on Youtube shorts. I later found out through my daughter that this has been around for some time and I’m late to the party.

These viral TikTok Fruit Roll-Ups Ice Cream ‘sandwiches’ are so easy to make and such a fun treat for kids and adults. And since Fruit Roll-Ups are quite popular with my kids, it only made sense to try Tik Tok idea here. So without further ado, here’s the ‘how-to’ for making Fruit Roll-Ups Ice Cream.

Ingredients

  • Vanilla Ice Cream – Use a scoop of your favorite vanilla bean ice cream per Fruit Roll-Up. Vanilla is best as it helps to be the backdrop for the Fruit Roll-Ups flavor and doesn’t mask the tartness of the Fruit Roll-Ups.
  • Fruit Roll-Ups – Any type of General Mills/Betty Crocker Fruit Roll-Ups. DO NOT use real fruit leather roll-ups as this will not crisp up.

Kitchen Tools

  • 1″ Cookie Scoop, Ice Cream Scoop, or Spoon – Use to place even amounts of ice cream onto the Fruit Roll-Ups.
  • Flat Bottomed Cup or Measuring Cup – This is optional and is used to flatten out the ice cream, but a regular spoon can be used too.

Directions

Prep Time: 3 minutes
Yields: 1 Snack

Step 1. Carefully roll out the fruit roll up, making sure not to let it fold onto itself. Lay it flat on top of the plastic you unwrapped it from.

Step 2. Using a 1″ cookie scoop or something similar in size, place a full round dollop of ice cream right in the middle of the roll up. If you want more ice cream, do one and a half scoops.

Step 3. Take something with a flat bottom (a spoon is fine too) and lightly flatten the dollop of ice cream to about 1/2″ height. Don’t smash it completely flat.

Step 4. Lastly, fold the fruit roll up over the ice cream like you would the top of a box. Fold it in on the sides then fold in the top and bottom last. Note: If you used more ice cream, instead of folding like a box top, bring the corner tips together and pinch the seams together.

Step 5. The Fruit Roll-Ups should immediately harden into a crisp shell for the ice cream. If it doesn’t harden and feels a bit soft, pop it into the freezer for about 5 minutes to harden. Then, eat immediately and enjoy!

Tips:

  • Do not try to make these in advance as the Fruit Roll-Ups can turn sticky. It’s best to eat these right away.
  • Vanilla ice cream is best, but you can test other flavors.
  • For the best results, start with ice cream straight from the freezer that’s firm. Using partially melted ice cream can get messy as the ice cream needs to stay in place on the Fruit Roll-Ups.
  • Eating these can get messy because the Fruit Roll-Ups create a brittle shell around the ice cream that can shatter (think chocolate shell on a cone) into pieces.
  • Make sure the ice cream is fully enclosed in the Fruit Roll-Ups to ensure the best results. If needed, stretch the Fruit Roll-Ups to cover the ice cream and pinch the seams. Any gaps in the seams can cause the ice cream to ooze out, making it messier to eat (it’s still good though).
