It feels like summertime in Southern California. The temperatures are a constant HOT! Sometimes the days are so hot that all you can think about is stuffing your face with a cool treat. But not just any cool treat…noooo. I’m talking about a special treat of Waffle Ice Cream with Maple Butter Syrup & Bacon!
To make my summer treat, I headed to Walmart to pick up the ice cream. As soon as I opened the car door, I could feel the heat coming off the pavement. I felt like a peanut being dry roasted and I could feel the moisture being sucked out of me. Luckily, I arrived just in time for the Blue Bunny ice cream demo, which was the perfect way to cool off.
After standing in line for an ice cream sample, I headed over to the ice cream aisle to pick up a carton (or two) of Blue Bunny ice cream. There were so many choices, but I had waffle ice cream on the brain and knew that butter pecan ice cream would be the perfect match.
When I came home and the kids saw the ice cream, they immediately wanted to eat it. It must have been torture for them to have to wait for me to complete preparing all the components for the waffle ice cream, but good things are worth waiting for, right?
As my kids circled around, I gathered up the ingredients for the waffle ice cream – Blue Bunny Butter Pecan, waffles, bacon, maple syrup and butter. The first thing you’ll need to do is get the cooking portions of the dessert out of the way. The bacon, waffles and maple butter syrup will need to be prepared.
For the waffles, you can use store bought, your own favorite recipe or my basic waffle recipe. My kids eat waffles at all times of the day, so I just needed to toast my pre-made basic waffles. While the waffles were toasting, I did double duty and started cooking the bacon and maple butter syrup.
Maple butter syrup is really simple. Just melt a stick of butter in some maple syrup and cook it down for 10 minutes or until the butter is completely melted. You can even add chopped apples in this too for another layer of flavor.
Once everything was done cooking, it was time to assemble the Waffle Ice Cream with Maple Butter Syrup and Bacon. Of course, once all the “hard” parts of the prep were done, the kids were right there to help assemble. Hmm…funny how that happens?
Waffle Ice Cream with Maple Butter and Bacon
Assembly –
- Break each waffle into four pieces
- Place one waffle piece onto the plate
- Place one scoop of Blue Bunny Butter Pecan ice cream onto the waffle
- Place another waffle piece onto the ice cream
- Drizzle the warm maple butter (recipe below) over the ice cream and waffles
- Top with chopped bacon
- Assemble into your mouth and EAT!!!!!
My youngest daughter loves this so much that she requested it for her birthday breakfast! How funny is that?! Although, I don’t blame her because I would totally eat this for breakfast.
Maple Butter Syrup
A sweet maple and butter syrup for waffles and pancakes.
Ingredients
- 1 cup maple syrup
- 1/2 cup unsalted butter
Instructions
- Warm the maple syrup in a pan over medium-low heat.
- Add butter. Continuously stir for 10 minutes or until the butter is melted.
- Serve warm over pancakes, waffles or butter pecan ice cream.
