It’s time for the April Pin Challenge! The purpose of the Pinterest Challenge is to motivate us to not just pin, but to make it happen! This month’s challenge is about Mother’s Day or projects geared towards the women in our lives. The pin I chose was a mochi waffle recipe, inspired by Keeping It Relle with minor adjustments.

Since we’re all stuck in quarantine, going out for a snacks at local cafes are a no go. So, my son initially made plain mochi waffles, which were good, but adding chocolate chips and slightly thinning the batter made it great! And although waffles are thought of as breakfast food, we often make choclate chip mochi waffles for mid-day finger food snacks. Take a look at my daughter’s snack plate…

Anyway, I love these chocolate chip mochi waffles! They would make a perfect Mother’s Day breakfast or brunch treat and I would love being served this (hint, hint). These have a slight crispy outside crust, with a soft and chewy inside (think mochi).

Chocolate Chip Mochi Waffles

Chocolate Chip Mochi Waffles

Yield: 4-5
Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes

Unlike regular waffles, these mochi waffles have a slightly crunchy outside and chewy inside. Great breakfast, brunch, or mid-day treat.

Ingredients

  • 1 1/4 cup mochiko flour
  • 1/4 cup sugar
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 3/4 cup milk + 2T to 3T. additional milk
  • 1 large egg
  • 1/2 tsp. vanilla extract (optional)
  • 1/4 cup chocolate chips
  • 2 T. melted unsalted butter (preferred) or sub wtih cooking spray

Instructions

  1. In a small bowl, mix together the mochiko flour, sugar, baking powder, and salt. In a large bowl, mix together milk, egg, and vanilla extract. Slowly add in the mochiko mixture, stirring to incorporate the mix.
  2. mochi waffles batter with chocolate chips Once the wet and dry are mixed together, add in the chocolate chips and stir to combine. Set aside mixture.
  3. Chocolate Chip mochi waffles batter Heat waffle iron to medium heat and melt butter in a small dish (I melt in a ramekin in the micowave).
  4. Brush on butter onto the top and bottom of the waffle iron. Place a little more than 1/4 cup of batter onto the waffle iron. You want the batter to cover about 3/4 of the waffle iron, but not to flood it entirely.* Close iron and cook for about 3-4 mintues.
  5. Cooling chocolate chip mochi waffles on baking rack Remove waffle and cool on a cooling rack. When all the waffles are done, serve as-is or with your desired toppings.

Notes

  • Make sure when measuring the mochiko that you level the mochiko to the top of the measuring cups. If you skip this step and your batter is super thick (it is a thick batter), add more milk, a tablespoon at a time.
  • The batter and chocolate chips make this sweet enough to eat as-is, but you can top with powdered sugar or fresh fruit & syrup. I like to break up the waffle and eat as a mid-day finger food snack.
  • *Partially flooding the waffle iron gives the waffles a nice spiked edge, but you can flood the entire waffle iron for a round waffle. Flooding the waffle iron will produce less waffles as it uses more batter. I prefer the look of the spiked edge 🙂

    It’s kinda hard to pass up chocolate chips, especially in waffles. I like the idea of eating as a snack with some fruit.

    Waffles are great any time in my opinion! I had never heard of mochi until last year when a co-worker brought mochi ice cream to work.
