Each month, a group of bloggers will challenge ourselves to create something we’ve pinned on Pinterest. It can be an exact recreation of the pin or a new creation inspired by the pin. The main idea is to help motivate us (and you too) to create something and to not let the pin idea collect virtual space dust. This month, I chose to do a Cool and Creamy Matcha Mousse that’s perfect for the warm summer weather and satisfies my family’s cravings for all things Matcha.

My pin inspiration came from Food & Wine’s Matcha White Chocolate Mousse recipe. While I did not follow their recipe, I made my own version using a tried and true chocolate mousse recipe as a base. I know you’re wondering why I didn’t follow the original recipe, right? It’s because I prefer to use gelatin when making mousse because it helps give the mousse a light airy texture. And if I could describe it, it’s like eating fluffy creamy clouds! So delicious!

Cool Matcha Mousse

Before I share the recipe, I want to share two tips.

  1. Use a finely milled cooking Matcha powder. Do not use Matcha drink powder or sweetened drink Matcha powders.
  2. Always dissolve Matcha powder in hot/boiling water to ensure there are no lumps before incorporating into any type of mix.

  • In a small bowl, add water and sprinkle gelatin over it. Set aside.
  • In another small bowl, add hot water and Matcha powder. Mix to fully dissolve the Matcha powder. Set aside.
  • Place a large bowl in ice. Add sugar, heavy cream, and vanilla. Whip until soft peaks form.

  • Add Matcha mix and gelatin mix into the whipped cream. If the gelatin mix has solidified, pop it into the microwave for a few seconds before adding it into the whipped cream.

  • Place mix into a pastry bag to pipe into small cups. I use a plastic bag with the corner snipped off for a cleaner look, but the mousse can also be spooned into cups and the tops smoothed out.
  • Chill for 20 – 30 minutes and the Matcha mousse will be ready to serve!

No-Bake Matcha Mousse

Serves 4-5
Prep time 50 minutes
Meal type Dessert
Misc Pre-preparable, Serve Cold

Ingredients

  • 1 1/2 cup heavy whipping cream
  • 3 heaped tablespoons sugar
  • 1 teaspoon vanilla
  • 1 1/2 heaped teaspoon Matcha powder
  • 2 tablespoons hot water
  • 1 Envelope gelatin
  • 2 tablespoons water

Optional

  • 1-2 tablespoon powdered sugar

Directions

Step 1
In a small bowl, add 2T. water and sprinkle gelatin over it. Set aside. In another small bowl, add 2T. hot water and mix in Matcha powder until it is all dissolved. Set aside.
Step 2
Place a large glass or metal bowl into ice. Add heavy cream, vanilla, and sugar into the bowl. Whip with a hand mixer on high until soft peaks form. Mix in the Matcha mix and gelatin mix. If the gelatin has hardened, pop it into the microwave for a few seconds before adding it into the whipped cream. Whip the cream until it begins to thicken a bit more.
Step 3
Place mousse into a pastry bag and pipe into small serving cups or hand spoon into cups. Chill for 20 - 30 minutes before serving.

  1. Thanks for the tips in your intro. I was already thinking of using up those matcha drinking powder bags I have flying around in my kitchen. I guess I will have to shop the real deal before dabbing into this yum looking recipe.
