Last week’s Part 1 – Awesome Chicken Dinner Salads focused on Latin American and Asian chicken salads. This week, I’m sharing another round-up of more awesome chicken chicken dinner salads for lighter week night dinners.
1. Southwestern Chopped Chicken Salad @Baking with Blondie
I actually made this salad this week and it was delicious! You can check out a picture of this salad on my instagram. This salad was more than enough to feed our family of six and we even had some leftovers. All the added vegetables and beans made for a filling dinner salad. Seriously, I was full after one bowl.
Tip: Instead of mixing the vegetables into the salad, place them in a separate bowl and allow each person to top their own salads. I recommend doubling the dressing if you use a large head of romaine lettuce. Also, I used rotisserie chicken to save on prep time and added some tortilla chip toppings for some crunch.
2. 15 Minute Avocado Caprese Chicken Salad with Balsamic Vinaigrette @Joyful Healthy Eats
This recipe is for two, but it can easily be adapted for a larger family. It has grilled chicken, avocado, and balls of mozzarella cheese that are dressed with a homemade balsamic vinaigrette. Doesn’t this just sound yummy?! The best part…the chicken is grilled, so there’s no reason to turn on the oven and heat up the house!
3. Paleo Greek Salad @FED + fit
My kids love Greek Chicken so placing it on a bed of romaine lettuce with all the elements of a standard Greek salad is sure to please the entire family.
4. Chicken and Nectarine Salad @With A Blast
Linda at With A Blast uses nectarine and grapes in her light chicken salad. I think this sweet chicken salad would be a nice change from the normal savory dinner salad. Besides, who doesn’t like eating fresh fruits?
5. Candied Pecan, Craisin, Feta Salad @Chef in Training
I had a salad similar to this one in a restaurant and I LOVED it! Candied nuts and feta in a salad is a winner in my book. You best believe that this salad will be on our dinner table very soon!
6. Honey Chipotle Chicken Bowls @How Sweet It Is
I love that this salad has lime quinoa in it. I’ve never had lime quinoa, but it sure does sound delicious! And who can resist the honey chipotle chicken that tops this salad? My mouth is already watering.
7. Sriracha Lime Chicken Chopped Salad @Lexi’s Clean Kitchen
Wow! When I saw this salad on Pinterest, I knew it was a “must make” dinner salad. I like the mix of the sweet pineapple with the savory sriracha lime chicken.
8. Grilled Chicken and Grape Spring Salad @Cooking Classy
I love chicken salad sandwiches with grapes in it, so a dinner salad with grapes and goat cheese is sure to be tasty. Oh, and did I mention there is a recipe for honey-balsamic dressing for this salad? Yum!
9. Best Salad Ever @Dabbles & Babbles
Okay, this salad doesn’t have chicken in it, but I had to include it since the title was “Best Salad Ever”. I mean, you can always add chicken to this salad and make it even better! Plus, I really do love all the ingredients in this salad and I know it would totally work for a dinner meal salad.
10. Sonoma Chicken Salad Recipe @Sweet Little Bluebird
This is the famous Sonoma Chicken Salad recipe from Whole Foods Market. Making it at home will save you lots of money! Just make it…it’s wonderful!
11. Pina Colada Chicken Salad @Creme de la Crumb
Can’t travel to the tropics for the summer? No worries. You can have the tropics in your mouth with this unusual Pina Colada Chicken Salad! This salad has macadamia nuts, coconut chicken tenders, fresh pineapple, and a pina colada vinaigrette dressing.
12. Strawberry Pecan Salad @Shugary Sweets
Since we love picking fresh blueberries and strawberries, this salad is the perfect way to use the fruits we pick at the local farms. It’s the perfect combination of fresh fruits and chicken!
13. Favorite Apple Chicken Salad @Gimme Some Oven
This is a copycat Panera Bread’s® salad, need I say more? If you haven’t been to a Panera restaurant, everything on the menu is awesome. Plus, if your kids eat mounds of apples each week, they’re sure to love this salad.

So many yummy ideas! The lettuce in my garden has been coming in gangbusters so we have been eating quite a few salads lately. Yum!

Rachel you need to share you secrets to growing lettuce. I gave up because the leaves kept getting eaten by bugs. Do you do it in a raised garden or put a netting over it?
I should send pictures. I have 3 raised beds that are packed with a variety of veggies. I’m sure it’s colder here in Virginia than there so that helps with the bugs a bit. I have found that it depends on what kind of bug you are dealing with. One thing I do is spread epsom salt (in the bath section or garden section- same stuff) on certain plants that is scented with peppermint oil or rosemary. Tomatoes love it because of the calcium and the strong scent of arromatic herbs help a bit to deter pests. Squirrels especially hate it, lol!
