Linda at With A Blast uses nectarine and grapes in her light chicken salad. I think this sweet chicken salad would be a nice change from the normal savory dinner salad. Besides, who doesn’t like eating fresh fruits?
My kids love Greek Chicken so placing it on a bed of romaine lettuce with all the elements of a standard Greek salad is sure to please the entire family.
I made this salad and it was delicious! This salad was more than enough to feed our family of six and we even had some leftovers. The added vegetables and beans made for a filling dinner salad. Seriously, I was full after one bowl.
Okay, this salad doesn’t have chicken in it, but I had to include it since the title was “Best Salad Ever”. I mean, you can always add chicken to this salad and make it even better! Plus, I really do love all the ingredients in this salad and I know it would totally work for a dinner meal salad.

So many yummy ideas! The lettuce in my garden has been coming in gangbusters so we have been eating quite a few salads lately. Yum!
Rachel you need to share you secrets to growing lettuce. I gave up because the leaves kept getting eaten by bugs. Do you do it in a raised garden or put a netting over it?
I should send pictures. I have 3 raised beds that are packed with a variety of veggies. I’m sure it’s colder here in Virginia than there so that helps with the bugs a bit. I have found that it depends on what kind of bug you are dealing with. One thing I do is spread epsom salt (in the bath section or garden section- same stuff) on certain plants that is scented with peppermint oil or rosemary. Tomatoes love it because of the calcium and the strong scent of arromatic herbs help a bit to deter pests. Squirrels especially hate it, lol!
