A few days ago, I was looking for a weekend lunch recipe for the kids. I wanted to use up the turkey pepperoni we had in the frig, but I didn’t feel like making pizza dough. Then, I remembered a recipe I found on the Noble Pig Blog for Pepperoni Pizza Puffs. This recipe was just what I was looking for. Not only is this a quick and easy recipe, it’s also kid approved.
How to make Pepperoni Pizza Puffs
This is what I initially whipped up. I added some Italian dried seasoning (1/8-1/4tsp) to the second batch and it definitely added some extra flavor to the the pizza puffs.
It bakes up crisp on the outside and soft on the inside. If your family is anything like mines, you may want to triple the recipe.
Mini pepperoni pizza bites made in mini muffin tin.
- 3/4 cup flour
- 3/4 tsp baking powder
- 3/4 cup milk
- 1 large egg - beaten
- 3/4 cup shredded mozzarella cheese
- 3/4 cup pepperoni - sliced into strips
- 1/2 tsp Italian seasoning
- pizza sauce, ranch dressing, or four cheese pasta sauce - for dipping
Preheat oven to 375o. Grease a 24-cup mini muffin pan. In a large bowl, whisk together all the ingredients, except for the pizza sauce and let stand for 10 minutes.
Divide batter among the mini-muffin cups, filling each cup about 3/4 full. Bake until puffed and golden, 20 to 25 minutes.
Serve with pizza sauce.
