Happy Thanksgiving Weekend! I hope you had a wonderful Thanksgiving with family/friends. For those that braved Black Friday, I hope you were able to scoop the best deals. In celebration of Thanksgiving weekend, we’re taking a break from the normal Merry Monday Link Party. Easy Leftover Turkey Rice Soup

- Optional – Cook brown rice according to package directions. Set aside.
- Add one sliced onion and 2-3 stalks of sliced celery to a pot on medium high heat. Cook until the celery and onions are softened. Add half a bag of sliced carrots and two packets of Maggi Chicken and Rice Soup Mix into a pot and follow the directions to prepare the mix.
- Add 3 cups of chopped leftover turkey and two handfuls of fresh spinach. Cook until the turkey is warmed through and the spinach has wilted.
- When the soup is done, add a scoop of brown rice and top with chopped cilantro. Serve!
There you have it, a super easy and affordable leftover turkey soup recipe to feed the entire family for $7 with lots of leftover veggies to create another meal!
