Step 1. Preheat the oven to 400°F degrees. Spray a 13″x 9″ or similar size baking dish with non-stick spray. Set aside. Next, heat the olive oil in a large pan. Add the ground pork to the pan and brown until no longer pink. Drain off the excess grease. Set aside.
Step 2. Fill a large stock pot with water and bring to a boil with 1 tablespoon of salt. Add in the dry rigatoni noodles and cook for 10 minutes or just until al dente. Drain off the water and add the rigatoni to the ground pork. Then add the jar of marinara. Stir to combine and coat the rigatoni with the marinara and ground pork. Taste and season with salt (1/2 tsp. to 1 tsp.) and pepper to taste.
Step 3. Transfer the rigatoni and meat mixture to the prepared baking dish. Spread the mixture evenly in the baking dish. Top with shredded mozzarella cheese and fresh chopped basil (optional).
