Easy No-Bake Strawberry Lemon Parfait Dessert

Since there’s no need to cook anything, this makes the perfect dessert for the kids to help assemble. It’s one of the best desserts for spring or summer parties. You will just need a few ingredients and some time to enjoy it!

Ingredients

  • 8oz. pkg. light cream cheese or regular cream cheese
  • Powdered sugar
  • Vanilla bean paste (substitute with vanilla extract)
  • Graham crackers
  • Strawberries
  • Lemon Pie Filling/Topping

Preparation/Assembly

Step 1. In a bowl, beat cream cheese, vanilla paste, and powdered sugar until combined. Set aside.

Step 2. Add bag or graham crackers to a sealable plastic bag and crush with a meat mallet or rolling pin. Set aside.

Note: crackers can be crushed in the graham cracker bag, but be careful not to pound too hard or the bag may pop open. A food processor can also be used.

Step 3. Wash, dry, and dice strawberries. Set aside. Open can of lemon pie filling. Set aside.

Step 4. Layer the prepared ingredients. Start by covering the bottom of the parfait cup with a layer of crushed graham crackers. Spoon lemon pie filling over the crackers and top with more crushed graham crackers.

  • 1 tsp. vanilla bean paste (substitute with vanilla extract)
  • 1 pack graham crackers
  • 1-pint strawberries
  • Lemon Pie Filling/Topping

Instructions

    Preparation

    1. Beat cream cheese, vanilla paste, and powdered sugar until combined, about 1 minute. Set aside.
    2. Place graham crackers into a large sealable bag and push any air out. Use a meat mallet or rolling pin to crush crackers in the bag. Set aside.
    3. Wash, dry, and cut dice strawberries. Set aside.
    4. Open can of lemon pie filling. Set aside.

    Assembly

    1. In a large mason jar or glass, sprinkle a layer of crushed graham crackers on the bottom.
    2. Add a few tablespoons of lemon pie filling to cover the graham crackers.
    3. Sprinkle another layer of graham crackers over the lemon filling.
    4. Spoon the cream cheese mixture over the lemon filling. If needed, smooth it out with the back of the spoon.
    5. Add a layer of diced strawberries.
    6. Optional - To garnish, top with whipped topping, more crushed graham crackers, and diced strawberries.

Notes

The amount of servings will depend on the size of the jar/cup being used and the thickness of ingredient layers.

TIPS/TRICKS/NOTES:
If you want the graham crackers fine, you can put into a food processor and pulse for a few seconds. I recommend keeping some bigger chunks for texture.
Use vanilla extract in place of vanilla bean paste if you don’t have it.
If you would like to make for more people, just keep the same amount of strawberries pie filling and graham crackers, but put less in each cup, and double or triple the cream cheese mixture.
