Save some time with this easy no boil noodles lasagna

It’s been awhile since I shared a recipe on the blog, so I thought it would be the perfect time to share an easy lasagna recipe.

If you’ve been reading my blog, you know that I like to keep things simple. This easy lasagna recipe allows you to skip cooking the noodles and save time in the kitchen. Yes, no more boiling the noodles! I know it’s a small step, but it makes assembly so much quicker and you still get a wonderful tasting lasagna.

To start the sauce, add olive oil to a large pot and saute onions until translucent (I added dried onions because my oldest doesn’t like the texture of regular onions). Next, brown both the ground sausage and beef and add the minced garlic. Cook just until fragrant.

While the meat is browning, place the frozen spinach in the microwave to defrost. Squeeze out any water and set aside for later.

*Tip ~ Cook bulk ground beef/sausage and separate into several containers or bags for quick prep meals. Add in spaghetti sauce*, herbs, and spices into the pot. Mix and heat until boiling. Turn heat off. Set aside for later.

In a separate bowl, mix together the ricotta cheese, Parmesan (set some Parmesan aside to sprinkle on top of the lasagna) and egg. Set aside for later.

*The sauce will determine the overall flavor, so go with what you like. I use Rinaldi’s Super Mushroom, but use your favorite sauce or make your own from scratch.

Gather the ricotta mix, cheeses, sauce, dried noodles and spinach for the lasagna assembly.

  1. Spray pan lightly with cooking spray. Add enough sauce to cover the bottom of the pan (Add a little more than shown in my picture).
  2. Place dried noodles over the sauce.
  3. Spread a generous layer of the ricotta mixture onto the dried noodles. Sprinkle spinach over the ricotta.
  4. Add more lasagna sauce and sprinkle mozarella cheese over it.
  5. Repeat steps 3 more times.

Tip ~ If you don’t have a deep 9″ x 13″ dish, place it on a baking pan to catch any sauce that spills over while cooking. This lasagna will reach the very top of a regular baking dish and will require a pan underneath to catch any spills. 

Top the last layer with dried noodles and pour the remaining lasagna sauce and cheeses over the top. Just an FYI, unless you have a deep baking dish, the lasagna will be level with the top of the baking dish.

Loosely cover with foil* and place into the oven for 1 hour at 350°F

Try to keep the foil from touching the top of the lasagna or the cheese will stick to it.  Slice and serve with garlic bread.

Easy Lasagna with No-boil Noodles

Ingredients

  • 1/2 lb. mild ground sausage
  • 1/2 - 3/4 lb. ground beef
  • 1 box no-boil lasagna noodles
  • 2 cups ricotta cheese
  • 1 egg
  • 1 cup grated parmesan cheese, set aside 1/4 cup for the top of the lasagna
  • 1 box frozen spinach
  • 2 tablespoons olive oil
  • 1/2 cup onion , chopped
  • 3 cloves garlic, minced
  • 2 - 24 oz. bottles spaghetti sauce, use your favorite brand
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon dried parsley
  • 1/4 teaspoon pepper
  • pinch sugar
  • 2 1/2 - 3 cups shredded mozzarella
  • 1 cup shredded Italian blend

Instructions

    1. Defrost spinach in the microwave and squeeze out any water. Set aside.
    2. In a small bowl, mix together ricotta, egg, and parmesan (set aside 1/4 cup of parmesan to sprinkle on the top of the lasagna).
    3. Heat olive oil in a large pot over medium-high heat. Add onions and saute until translucent. Add in ground sausage and ground beef. Cook until browned. Add minced garlic and stir until fragrant.
    4. Lower heat to medium and add spaghetti sauce, oregano, basil, parsley, pepper, and a pinch of sugar. Stir and heat until boiling. Turn the heat off. Set aside.
    5. Spray a 9" x 13" pan with cooking oil. Add a thin layer of meat sauce to cover the bottom of the pan. Lay dry lasagna noodles onto the sauce.
    6. Spread the ricotta mixture over the dry noodles. Sprinkle spinach over the ricotta. Next, cover with meat sauce and sprinkle with mozzarella. Repeat these layers three more times.
    7. The last layer will be topped with dried noodles. Pour as much of the lasagna sauce over them to ensure the noodles are completely covered. Sprinkle the set-aside parmesan cheese and Italian blend cheese over the top. Cover loosely with foil. Bake in a 350F degree oven for 1 hour.

Notes

Tip - place your baking dish on a baking pan to catch any spillage.

  3. Your lasagna looks delicious! I always use no-cook lasagna noodles too, it’s such a time saver and I feel like they’re easier to deal with uncooked than when they’re cooked! I haven’t made lasagna in months…. I think I need to put it on the menu for next week or the following one!! This looks so so tasty!!!

My ex wife came from Italy and I really enjoyed cooking original recipes with her mother..I LOVE lasagna but her way was to layer the noodles, sauce, cheese, more noodles, sauce, a layer of Italian sausage, more cheese, a layer of ground beef, more sauce and topped with another different brand of cheese and it took awhile too cook.
