3 Game Day Finger Foods - Pulled Pork, Salmon, & Pizza Bites

Whoo-hoo! It’s getting close to the big game day! And even though our team didn’t make it, we still like to watch the games. Well, my boys like to watch the games, while I’m more of a backseat football watcher.

“What’s that?”, you say.

It means I like to watch over my boys’ shoulders while I stuff my face with game day food. Yes, I’ll admit that I’m more about the game day food than I am the actual game. The only issue I have with game day food is that my family can never agree on what to eat. Never. The boys want pizza, the girls want sushi, and my hubby prefers meat. So, to solve this food dilemma, I decided to make 3 Game Day Finger Foods – Pulled Pork, Salmon, & Pizza Bites to satisfy everyone’s game day cravings.

RITZ® Crackers and Coca-Cola

To create this finger food meal, I headed to my local Vons to pick up RITZ® Crackers and Coca-Cola. I knew RITZ® Crackers would make the perfect base for finger food appetizers and Coca-Cola is always a great thirst quencher. And while I was there, I also picked up a fruit bowl and a tray of fresh veggies to complete my finger food meal.

3 Game Day Finger Foods

Everyone was so excited for our finger food meal that I had lots of ‘helpers’ in the kitchen. Unfortunately, they were eating the fingers foods faster than I could make them! I was forced to send them off with a sample tray of finger foods and a few bottles of Coca-Cola. Once the ‘helpers’ were out of the kitchen, I was able to whip up all 3 of the finger food appetizers in a short amount of time. 

1. Pulled Pork & Ranch Slaw Appetizer

Pulled pork & Ranch SlawFor my meat loving hubby, I made Pulled Pork & Ranch Slaw. I used a pre-made slaw mixed with Ranch dressing,  pre-made Kansas style pulled pork, medium cheddar, and RITZ® Crackers.

To keep clean-up easy, cover the baking pan with foil and lay crackers on top. Next, add warmed pulled pork on each cracker. Place the tray under the broiler until the cheese starts to melt. Finish with Ranch slaw over the pork and it’s ready to serve!

2. Smoked Salmon with Pesto Cream Cheese

Smoked salmon with pesto cream cheese appetizerMy girls love sushi and all things seafood, so this Smoked Salmon with Pesto Cream Cheese was made for them. This finger food is super simple and requires absolutely no cooking or baking. Yay!  

3. Pizza Bites

My sons can never get enough of pizza, so they requested pizza bites. Mozzarella cheese, pepperoni, sauce, more cheese, and olives (optional) are layered to create this tasty appetizer. 

3 Game Day Finger Foods Spread

Here is a portion of the game day spread. Since everyone’s cravings were satisfied, it was a huge hit! In fact, I’ve already received appetizer requests for our next game day finger foods meal!

Pulled Pork & Ranch Slaw Appetizer

Serves 40
Prep time 15 minutes
Cook time 3 minutes
Total time 18 minutes
Meal type Appetizer
Pulled pork & Ranch slaw appetizer. A great game day or finger food appetizer.

Ingredients

  • 1 box RITZ® crackers
  • 1 -10oz. bag medium cheddar cheese
  • 1 box Kansas style pulled pork
  • 1 - 10oz. bag slaw mix
  • 1 bottle Ranch dressing

Note

  • If substituting broccoli slaw in place of regular cabbage slaw, pulse the slaw in a food processor to cut the size of the broccoli slices.
  • Keep a close eye on the crackers and cheese as it can burn within a minute under a broiler.
  • Crackers can also be baked at 350F until the cheese is melted.

 

Directions

Step 1
Turn on broiler. Line pan with foil.
Step 2
Warm pork in microwave according to package directions. Set aside. Mix slaw with Ranch dressing. Set aside.
Step 3
Place crackers on pan, sprinkle cheese on crackers, and top with warm pulled pork. Place under broiler just until cheese is melted - just under a minute per batch. Top with slaw.

Smoked Salmon with Pesto Cream Cheese

Serves 36
Prep time 20 minutes
Meal type Appetizer
Misc Serve Cold
Easy cold smoked salmon with pesto cream cheese.

Ingredients

  • 1 box Ritz® crackers
  • 6oz smoked salmon
  • 4 Ounces cream cheese
  • 1/4 cup pesto
  • 1 Small bottle capers
  • 1 bunch fresh dill

Note

Do not add too much salmon or it may be too salty.

Directions

Step 1
Add cream cheese to a bowl and leave out on the countertop for 20 minutes to soften. Add pesto and mix. Spread onto crackers.
Step 2
Add 3-4 capers on crackers. Place a small amount of smoked salmon next to the capers and top with fresh dill.

Pizza Bites

Serves 36
Prep time 20 minutes
Meal type Appetizer
Pizza bite appetizers using Ritz Crackers.

Ingredients

  • 1 box RITZ® Crackers
  • 1 Package Pepperoni
  • 3/4 Cup Pizza sauce
  • 1 - 10oz. Bag Mozzarella

Optional

  • 1 Can Sliced Olives

Note

May be baked in an oven on a large tray at 350F.

Directions

Step 1
Turn on broiler. Cover a pan with foil. Place crackers on pan. Layer cracker with cheese, pepperoni, 1 tsp. sauce, cheese, and olive.
