I have a delicious black bean cumin soup recipe to share with you today. Black bean soup is thick, rich, and oh-so yummy!

Black Bean Cumin Soup Recipe.

Black bean cumin soup is an easy and filling meal idea that is packed with flavor and a good option for vegans and vegetarians too. This soup is made with black beans and cumin, which gives it a warm, earthy taste. It’s a great dish to make when you don’t have much time to cook, but still want something healthy and delicious!

Black Bean Cumin Soup

Ingredients

  • 2 T. olive oil
  • 1 large onion, chopped
  • 5 garlic cloves, crushed
  • ½ tsp salt
  • 1 T. fresh thyme
  • 3 can black beans–drained and rinsed
  • 4 cups vegetable stock
  • 1 (28) oz can whole tomatoes or diced tomatoes
  • 2 tsp. ground cumin
  • Garnish – sour cream, fresh cilantro (chopped), avocado (sliced)
  • Optional – toasted French bread

Equipment

  • Large soup pot
  • Immersion blender or blender
  • Knife & Cutting Board
  • Measuring spoons/cup

How to Make Black Bean Cumin Soup

Sautee the onions for the black bean cumin soup.

Step 1. Heat the olive oil in a large pot over medium heat. Then add the onion and salt and sauté until softened, about 5-7 minutes.  

Saute thyme and garlic for the black bean cumin soup.

Step 2. Next, add garlic, thyme (full stems), and cumin. Sauté for about an additional minute. 

Step 3. Now, add in the beans, whole tomatoes (with the juices), and vegetable stock. Bring to a boil, then reduce heat and simmer for 20 minutes.

Step 4. To finish, remove the thyme stems and discard them. Finally, use an immersion blender to puree the soup until it is smooth and creamy. There should be no large chunks.

Note: If you do not have an immersion blender, carefully scoop part of the soup into a large blender and blitz until smooth. Place blended soup into a separate large bowl. Repeat blending until all the soup is smooth. BE CAREFUL as the contents will be hot and you’ll want to make sure the blender cover is on. For additional precaution, place a kitchen towel over the top of the blender to catch any seepage.

Step 5. Ladle soup into serving dishes and garnish with optional fresh cilantro, sour cream, or avocado if so desired! Garnish items can also be left on the side for each person to garnish as desired. Optional – serve with toasted French bread.
