Sweet Asian Holiday Snack Chex Mix. A Chex Mix with the added flair of sriracha, nori, and Japanese rice crackers.
Ingredients
Chex Mix
- 3 cups Rice Chex
- 3 cups Corn Chex
- 2 cups Bugles
- 2 cups cheese crackers
- 2 cups pretzels
- 1 1/2 - 2 cup roasted Peanuts or mixed nuts
Toppings
- 2 cups holiday colored hard shell chocolate candy
- 2 sheets nori (Japanese dried seaweed) (Cut into 1 inch x 1/8 inch slivers)
- fine sea salt (to taste)
Toppings (Optional)
- 2 cups Japanese rice crackers
- 1 tablespoon roasted sesame seeds
Sauce
- 1 cup butter
- 1/2 cup sugar
- 3/4 cups Karo corn syrup
- 1 - 3 heaped tablespoon sriracha (1 Tablespoon has a hint of heat, add up to 3 for added heat)
- 3 tablespoons soy sauce
- 1/4 cup oil
Sauce (Optional)
- 1 tablespoon worcestershire sauce (leave out if you want a more sweet mix)
Note
The sauce coating will still be 'wet' when you remove it from the oven. It will harden as it cools. Do not over bake or it will taste burnt. Add up to 3 Tablespoons of sriracha for heat (add more if you like). Some of the mix may stick to the foil.

Step 1 | |
Pre-heat oven to 225°F. Line a large baking sheet with foil. Combine all the Chex mix ingredients on the baking sheet. Mix. | |

Step 2 | |
In a pot on medium heat, combine the butter and sugar. Mix until the sugar is dissolved and add the remaining sauce ingredients. Mix until well combined. Pour over the Chex mix and toss until everything is well coated. Place in the oven for 20 -25 minutes, tossing every 10 minutes. | |

Step 3 | |
Remove the baking sheet from the oven and add the toppings, except for the sea salt. Toss until well incorporated. Sprinkle sea salt over mix until you get the taste you like. Let cool completely. Place in an airtight container or serve. |
