How to make a chocolate giant mochi ice cream dessert.


  • 200g Sweet rice flour
  • 100g Sugar
  • 2 teaspoons Cocoa powder
  • 200ml Water
  • 1 bag Corn Starch or Potato Starch
  • 1 carton Cookies-n-Cream Ice Cream


Step 1
Remove the ice cream from the freezer and leave out to soften. Line a large bowl with plastic wrap all the way to the top, leaving some excess to fold over the giant mochi ball when filled. Set aside.
Step 2
In a microwavable bowl, mix all the ingredients, except for the ice cream together. Microwave for about 3 minutes. While the mochi is in the microwave, prep your work surface with a generous amount of corn starch or potato starch.
Step 3
Place the cooked mochi on top of the corn starch and add more starch on top of the mochi. Roll the mochi into a circle large enough to cover the inside of the plastic lined bowl all the way to the top. Place the rolled mochi into the bowl. Smooth out and dust off any excess starch using a basting brush.
Step 4
Fill the mochi lined bowl with ice cream a little more than half way up and smooth out. Pull the mochi to cover the ice cream and cover with plastic wrap. Place in the freezer for a minimum of 6 hours or overnight. When ready to eat, slice and serve!
