  • 2 lbs. pork shoulder - cut into 1" cubes or slightly smaller
  • 2 Tbsp. vegetable oil
  • 2 Tbsp. chopped bottled garlic or 3 cloves chopped fresh garlic
  • 1 medium onion - sliced
  • 1/2 cup bell peppers - sliced
  • 2 Tbsp. soy sauce
  • 2 Tbsp. fish sauce
  • 1 cup water or chicken stock
  • 1 6 oz. can tomato paste
  • 1 4 oz. bottle pimentos
  • 1 Tbsp. brown sugar
  • 1 bay leaf
  • 6 oz. frozen peas or half of a 13 oz. bag
  • salt/pepper to taste
  1. Heat oil in a large pan on medium high heat. Add onions and bell peppers. Cook until the onions begin to caramelize. Lower heat to medium and add chopped garlic and pork. Stir until all sides of the pork are browned - about 5 minutes.
  2. Add soy sauce, fish sauce, tomato paste, water, pimentos, bay leaf, and sugar to pan. Stir until well blended. Add salt and pepper to taste. When the sauce starts to boil, cover the pan. Lower heat to simmer and cook for 20 minutes. Add in peas and cook for an additional 10 minutes. Serve over rice.

Recipe Notes

Fish sauce can be omitted, but it adds a unique flavor to the dish.
