Ingredients

  • Frozen pineapple chunks – Base of the drink and create a slightly thicker drink
  • Pineapple juice – Adds some sweetness without having to add sugar
  • Water – Helps to thin the juice. Omit if you prefer the juice thick like a smoothie.
  • Fresh spinach leaves – Adds some extra nutrition and creates a bright green color
  • Crushed ice – Helps keep the drink cold and adds a bit of liquid
  • Optional – mint leaves if you like an earthy flavor

Equipment

  • Blender
  • Measuring cups
  • Serving cups – Two 9-10oz. size cups or one 16-18oz. cup (Can use smaller cups if not serving over ice)

How to Make Tropical Green Juice

Step 1. Place 1 cup of frozen pineapple chunks, 1/2 cup packed spinach leaves, 1 small 6 oz. can pineapple juice, 2 oz. of water (optional), and 3-4 mint leaves (optional). Note: adding mint leaves gives the drink an earthy taste and would recommend omitting it if you don’t like mint or are making this for kids.

Tip

Empty the can of pineapple juice into a 1 cup measuring cup and fill the remaining space with water. This will give you the exact 2 ounces of water needed.

Step 2. Blend all the ingredients until smooth.

Leftover Spinach

Spinach doesn’t last long in the fridge. To keep them from spoiling, place the spinach in the freezer to use in smoothies or in pasta dishes.

Step 3. To serve, fill two 9 oz. glasses about half way with crushed ice. If drinking as a single serving, fill a 16 oz. glass about 1/3 way with crushed ice. Pour the blended drink over the ice. Enjoy!
