How to make Matcha boba balls from scratch using tapioca starch, sugar, and water. Omit the Matcha for plain boba balls for boba drinks.


  • 1 cup tapioca starch
  • 1- 2 tablespoon Matcha powder
  • 1 - 2 teaspoon sugar
  • 6 cups water
  • 1/2 cup dark brown sugar


The dough tends to easily dry out and form a crust. Do not worry about this. Just dip your fingers into water and incorporate it into the dough to moisten it again. There may be bits of dried crust in the dough, but that will be fine.

Step 1
Add the water and brown sugar to a pot and bring to a boil over medium high heat.
Step 2
While waiting for the water to boil, add tapioca starch, sugar, and Matcha to a bowl. Mix well to ensure the Matcha powder and sugar are throughly incorporated.
Step 3
Then, take a little less than 1/2 cup (3.3 oz) of the boiling sugar water and add it to the dry Matcha mix. Stir until a dough forms. If the dough is a little sticky, add 1/2 tsp. more of tapioca starch. Mix in, leaving some of the starch on the outside of the boba dough to make it easier to handle. Note: turn off the heat to the brown sugar water till you are ready to boil the boba balls.
Step 4
Break off a small ball of the boba dough and roll into a log that is about the width of a pea. Take a knife and cut into pea size pieces. Roll into balls and place into a bowl. Continue this process until all the boba dough is rolled into pea size boba balls. Note: Work on a silicone mat or non-stick surface. If the dough is still sticky, sprinkle some tapioca starch on the work surface.
Step 5
Bring the pot of brown sugar water back to a boil. Add in the Matcha boba balls. Stir to ensure the boba balls don't stick to the bottom. Lower the heat to medium low, cover, and cook for 15 minutes. When done, scoop out the boba balls and place in a bowl with clean water. Add some of the brown sugar water into the bowl. It's now ready to be used in boba drinks.
