A mix of lime and herbs for an easy grilled chicken marinade.
Ingredients
- 1 - 3lb. bag boneless skinless chicken thighs (trim off fat)
- 1/4 cup olive oil
- 2 Large lime juice (about 3 Tablespoons)
- 3 Large garlic cloved (minced)
- 1 tablespoon fresh thyme
- 1 tablespoon dry oregano
- 1/2 heaped teaspoon coarse sea salt
Optional
- 1/2 teaspoon ground rosemary (substitute with heaping teaspoon of fresh chopped rosemary)
Note
Make sure the chicken thighs are fully defrosted before adding marinating. If short on marinade time, use a fork and poke holes in the thighs before marinating.

Place defrosted and trimmed boneless chicken into a large resealable bag. In a small bowl, mix together all the remaining ingredients. Add this mixture to the chicken. Press out the air from the bag and seal. Let this marinate a minimum of 4 hours or up to 24 hours. Grill for about 10 - 12 minutes or when the internal temperature reaches 165°F. |
