No-Bake Matcha Mousse

  • 1 1/2 cup heavy whipping cream
  • 3 heaped tablespoons sugar
  • 1 teaspoon vanilla
  • 1 1/2 heaped teaspoon Matcha powder
  • 2 tablespoons hot water
  • 1 Envelope gelatin
  • 2 tablespoons water


  • 1-2 tablespoon powdered sugar


Step 1
In a small bowl, add 2T. water and sprinkle gelatin over it. Set aside. In another small bowl, add 2T. hot water and mix in Matcha powder until it is all dissolved. Set aside.
Step 2
Place a large glass or metal bowl into ice. Add heavy cream, vanilla, and sugar into the bowl. Whip with a hand mixer on high until soft peaks form. Mix in the Matcha mix and gelatin mix. If the gelatin has hardened, pop it into the microwave for a few seconds before adding it into the whipped cream. Whip the cream until it begins to thicken a bit more.
Step 3
Place mousse into a pastry bag and pipe into small serving cups or hand spoon into cups. Chill for 20 - 30 minutes before serving.
