Lucky Charms Cereal Treat Bars
Ingredients for Lucky Charms Cereal Treat Bars:
- Box of Lucky Charms Cereal (small 10.5 size box is fine), will need 6 cups of cereal or 4 cups Lucky Charms if adding Rice Krispies (2 cups)
- 1 10oz. bag mini marshmallow
- 1/4 cup unsalted butter
- 1/4 to 1/3 cup Lucky Charms marshmallows – pick out additional marshmallows to top the treats
- optional – 1 cup of Rice Krispies
- optional – 1 1/2 tsp. of any type of nonpareil rainbow sprinkles
Equipment needed to make Lucky Charms Cereal Treat Bars:
- 8″x8″ baking pan
- Spatula or spoon for mixing the treats
- Gloves – I use food-safe gloves to compress the cereal bars, but a spatula or spoon can be used
- Parchment paper for lining the baking pan or spray pan with cooking spray
How to Make Lucky Charms Cereal Treat Bars:
Step 1. In a large pot, melt 1/4 cup butter and 5 cups of mini marshmallows over medium-low. Once the butter starts to melt, continuously stir it so it doesn’t burn. Then, when the marshmallows are completely melted, immediately turn off the heat.
Step 2. To the pot, add in the 6 cups Lucky Charms cereal OR 4 cups Lucky Charms and 2 cups Rice Krispies (this is our preferred mix). Quickly stir until all the cereal is coated in the melted marshmallow mixture. Do not overmix as the Lucky Charms marshmallows will start to melt.
Measuring the Cereal
These bars are gooey and crunchy. Make sure the cereal is level with the measuring cup or line. Using too much cereal will create a dry, hard, and dense cereal bar. Note: If you feel like it’s too gooey, add 1/4 cup more cereal until you get the consistency you prefer.
Step 3. Pour mixture into an or 8″x8″ prepared pan. Spread mixture evenly in pan and slightly compress (do not overly compress or the treats will be too hard) with a spatula or gloved hand (spray glove with cooking spray). As shown, I used a parchment-lined 9″x13″ pan to compress and shape the mixture to a 9″x8″ size.
Can I substitute pan size?
Using an 8″x8″ pan will create a bar that is slightly thicker than an inch. A 9″x13″ can also be used if you shape the mixture to a 9″x8″ size This should also result in 1″ high treat bars, which are perfect for kids to bite into.
Step 4. Optional – Before the cereal treats cool and while still sticky, top with an additional 1/4 cup Lucky Charm marshmallows and 1 1/2 tsp. of rainbow nonpareil sprinkles.
Step 5. Let the bars completely cool before cutting into 12 pieces. Enjoy!
How to Store
Best results: Store leftover treats in an airtight container at room temperature for up to 3 days.
If you must store for longer, place the airtight container in the fridge for up to 10 days. Let the treats sit for a few minutes at temperature to soften a bit before eating. These can be frozen if wrapped individually in parchment and plastic wrap. Keep in a freezer bag for up to 2 months.
