Everybody loves this easy slow cooker Cajun Chicken and Sausage recipe. Just dump a few ingredients in a slow cooker and have it ready in next to no time. It’s hard to beat that!

The best thing about slow cooker recipes—aside from the delicious results—is how easy they are! I can prep all my ingredients and throw them into the pot while I do other things, and then dinner’s ready when it’s time to eat. No hovering over a hot stovetop required!
Slow Cooker Cajun Chicken and Sausage

Ingredients
- 1 lb. boneless, skinless chicken, cut into 1″ cubes
- 12 oz. andouille sausage, cut into 1/2″ wide rounds
- 1 cup onion, rough chopped (frozen onions can be substituted)
- 1 cup green bell peppers, rough chopped (frozen bell peppers can be substituted)
- 2 cloves garlic, minced
- 1 1/4 cup chicken broth
- 1/2 cup tomato sauce
- 1 can diced tomatoes
- 3 T. tomato paste (store leftover paste, pressed flat, in an airtight plastic bag. Push all the air out and store for up to 6 months)
- 2 tsp. Cajun seasoning
- 1/4 tsp. cayenne
- Optional – chopped green onions for garnish
How to Make Slow Cooker Cajun Chicken and Sausage
Step 1. Put all the ingredients into an 8 quart slow cooker. Stir until everything is combined. Cover and cook on low for 6-7 hours OR high for 3 hours.
Step 2. Start the rice about 30-60 minutes before the Cajun chicken and sausage is done cooking. Note: I use a rice cooker and each rice cooker is different. Depending on your rice cooker, start cooking the rice to be done cooking around the same time as the Cajun chicken and sausage. If you have a rice cooker that will automatically keep the rice warm after cooking, you can start it at the same time as the slow cooker.

Step 3. When the Cajun chicken and sausage are done cooking, serve over rice and top with green onions (optional). Tip: For less sauce, use a slotted spoon to serve the Cajun Chicken and Sausage over the rice.
How to Store Leftovers
If there are any leftovers, store it an airtight container for 2-3 days in the refrigerator.
