The Incredible Disappearing Cocoa Brownies Recipe

Lately, I’ve been trying to cut back on premade packaged items and make more things from scratch. I’ve been scouring Pinterest and the web for copycat recipes that I can make to replace the store stuff. This past week, I had the chance to make a wonderful recipe from Lynn’s Kitchen Adventures, which she calls homemade brownie mix. However, I think she should really change the name to The Incredible Disappearing Cocoa Brownies Recipe.  I know, it’s a really long name, but it truly fits. For starters, it really does taste like a store bought boxed brownie mix. My youngest son couldn’t believe that I made it from scratch, which made me feel somewhat insulted. Second, it will magically make your kids and husband show up in the kitchen. Third, it will disappear in the blink of any eye. Seriously, it’s good!

Lucky for me, I was able to take pictures of my second brownie batch and have something to post this week.

Cocoa brownies

Seconds after this photo, one of these pieces disappeared into my youngest daughter’s tummy. It was a collective effort by my kids to distract me while she went in for the kill. I’m thankful for this one photo 🙂

Cocoa Brownies Recipe
Adapted from Lynn’s Kitchen Adventures

  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2/3 cup unsweetened cocoa powder
  • 1 1/4 to 1 1/2 cups white sugar (original recipe uses 2 cups, which is too sweet for us)

Mix ingredients together and place in a jar or container. When you are ready to make brownies add

  • 1/2 cup melted butter
  • 1/2 cup oil
  • 3 eggs
  • 1 teaspoon vanilla

Mix until well combined. Grease a 9×13 pan and spread batter evenly in pan. Bake at 350 for 22-25 minutes or until done.

This is a great recipe for a basic brownie, but you can add whatever you fancy – chocolate chips, marshmallows, or nuts. Just make this, you won’t be sorry!
