Moist-n-tasty Baked Burger Patties

Do you keep a recipe box? It may be an old-fashioned way of collecting recipes, but I love digging through old recipe boxes, don’t you? To me, searching through an old box of collected recipes is like opening Christmas presents – exciting! So last year, when I flew back home to visit grandma, I made it a point to raid some of my aunts’ recipe boxes to collect some tasty recipes. And in the process, I found my mom’s recipe box! I haven’t seen my mom’s recipe box in over 10 years and it was such a sentimental find for me. I’m slowly going through the box and this moist-n-tasty baked burger caught my eye. This recipe has a small hint of the island teri-burger flavor that mixes great with your favorite burger toppings. What I love about this recipe is that it’s a simple family recipe. There isn’t any complicated fluff and uses everyday ingredients, so let’s get to it!

The moisture in this patty comes from milk soaked bread. It’s a great way to use up the ends or old bread. Just cut up 6 slices into crouton-sized cubes and soak with milk.

Next, season eggs and fold into the bread mixture. The bread will begin to breakdown and that’s ok. Fold in the remaining ingredients* to the mix, except the ground beef. The mix will be extremely wet. Once all the ingredients are well blended, add the wet mix to the ground beef and mix well. 

*Since my oldest son doesn’t care for the consistency of onions, I grated half of the onions and minced the remaining half to try to hide the texture.

Line a large baking sheet (I used one large sheet and a small sheet) with foil and spray with cooking spray. Take a small baseball sized handful of the buger mixture, place it on the baking sheet, and shape into a large 5-6 inch patty. The mix should make around 10 patties. Bake for 15 minutes on oneside, flip, and bake another 5 minutes or until done. If adding cheese (I use provolone), add during the last 2-3 minutes of baking to melt. If you prefer thicker burgers, adjust the cook time.

Moist-n-Tasty Baked Burger Patties

Baked burger patties using regular pantry ingredients.

Ingredients

  • 2 lbs. ground beef
  • 6 Slices cubed old bread (ends are good too)
  • 1 Cup milk
  • 2 eggs
  • 1/2 Medium onion (1/2 grated and 1/2 minced)
  • 1/2 Teaspoon kosher salt
  • 2/3 cups Aloha soy sauce
  • 2 Tablespoon mayonnaise
  • 2 Cloves minced garlic (If using bottle garlic, use 2 heaping teaspoons)
  • 2 Teaspoon grated ginger
  • 2 Tablespoon brown sugar
  • cooking spray

Instructions

  1. Preheat oven to 350ºF. Line a large baking sheet with foil and spray with cooking spray/oil. Set aside.
  2. Cube bread into 1" squares and add milk. Stir until the bread absorbs the milk. Scramble eggs and fold into the milk/bread mixture. Add all the remaining ingredients, except for the hamburger, and fold into the mix until well combined. The bread will break apart a little, but his is fine. Add this mixture into the ground beef.
  3. Mix will be extremely 'wet'. Take a small baseball sized handful of the meat mix and place it on the lined foil pan. Shape into a large flat 5" -6" hamburger shape. Bake for 15 minutes, flip and bake for 5 more minutes.

Notes

  • Add your favorite burger toppings - lettuce, cheese, onions, pickles, tomatoes, and more.
  • If using only 1 pound of ground beef, reduce the ingredients in half.

  2. I want to try your recipe Erlene. I’ve never tried soaked bread but it does sound like a moist burger! How awesome that you found your Mom’s recipes. I know you are having fun with those. Homemade burgers are the best!
