It’s week three of Pinterest Tested and I’ve managed to test a few more recipes from Pinterest. So let’s dive right in and see which ones worked and which didn’t.

I’ve always wanted to try a salted caramel cookie recipe. I chose a recipe that has been pinned over 22,000 times and was posted in 2014. There were comments about the dough being sticky and difficult to handle, but I decided to give it a go.

After mixing all of the ingredients together and following all the recipe steps, I had a few issues.

  1. I ended up with an extremely sticky dough. There was no way that I was going to be able to roll out round cookie balls without the dough sticking to my hands. I think the recipe failed to mention that the dough needs to be placed in the refrigerator for at least 40 minutes to let it firm up, which makes a HUGE difference. Do not skip this step!
  2. Make sure you have more dough covering the caramel on the bottom of the cookie or it will leak out during baking.
  3. The recipe calls for regular caramel candies, but the caramel hardens when it cools. This can make it difficult to eat if not warmed up. A better substitution is to use Rolos because the center will remain soft when cooled.
  4. This is an extremely sweet cookie. Don’t skip the kosher salt as it helps to balance out the sugar.

After making two batches of this cookie recipe and making minor adjustments, the cookie is AWESOME SAUCE! My kids had no complaints eating two batches of this yummy recipe. Definitely a keeper!


Cranberry Buttermilk Breakfast Cake

On last week’s Pinterest Tested, I tried out sugar-coated cranberries, which was a fail for me. What it left me with was a huge bowl of sugar soaked cranberries that I needed to use in a recipe.  I scoured Pinterest and found this cranberry breakfast cake that was posted in 2011 and has been pinned over 122,000 times.

I made two substitutions to the recipe:

  1. I used the sugar soaked cranberries instead of plain cranberries.
  2. I substituted the zest of an orange with the zest of a clementine.

Don’t let the look of the crust fool you. It will look dried out, but it’s actually a nice flakey crust. When you cut through the crust, it reveals a perfectly moist cake. This cake is the perfect balance of tartness and sweetness, which makes it a great breakfast cake.


Pesto Chicken

I love when a recipe has “easy” in the title. It means that it’s a quick prep meal, uses little ingredients, and hopefully tastes great.

This recipe has been pinned more than 311,000 times since it was published on September 2014. There are a few comments about the chicken sauce becoming watery and issues with the chicken not being covered while cooking (not that big a deal).

While I love that this recipe only uses 4 ingredients, it’s missing something. One seasoning it’s missing is salt. I know, I know…you should always “season” everything. However, when I’m Pin testing a new recipe, I try to follow it and this recipe doesn’t add any salt. Also, if I make this again, I plan on following a suggestion in the comments to marinate the chicken in a vinaigrette for added flavor. I also covered my chicken so the cheese wouldn’t burn and took the foil off at for the last 20 minutes of cooking.
